Roasted Chicken Ingredients
- 1 whole chicken (3-4 pounds)
- 2 tablespoons olive oil or melted butter
- 1 lemon, halved
- 4 garlic cloves, crushed
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- 1 tablespoon fresh rosemary (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh parsley, chopped (optional)
- Salt and pepper to taste
- 1 onion, quartered
- 1 carrot, roughly chopped
- 1 celery stalk, roughly chopped
- 1 cup chicken broth (optional for basting)

INSTRUCTIONS:-
1. Preheat the oven to 425°F (220°C).
2. Prepare the chicken:
Remove the giblets from the chicken's cavity and pat the chicken dry with paper towels.
Rub olive oil or melted butter all over the chicken, including inside the cavity.
Generously season the chicken with salt and pepper, inside and out.
3. Stuff the chicken:
Place the lemon halves, garlic cloves, thyme, and rosemary inside the chicken cavity.
4. Truss the chicken (optional):
Tie the legs together with kitchen twine to help the chicken cook evenly.
5. Arrange the vegetables:
In a roasting pan, scatter the onion, carrot, and celery to create a bed for the chicken.
6. Roast the chicken:
Place the chicken on top of the vegetables in the roasting pan.
Roast the chicken for 1 hour to 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
Optionally, baste the chicken with chicken broth or pan juices every 20-30 minutes.
7. Let it rest:
Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This helps keep the chicken juicy.
8. Serve:
Carve the chicken and serve it with the roasted vegetables and your favorite sides.
