PRAWNS SOUP RECIPE 
INGREDIENTS:-

  • 400g prawns, peeled and deveined
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 medium tomato, chopped
  • 1 carrot, thinly sliced
  • 1 stalk celery, chopped
  • 1 red bell pepper, chopped
  • 1 cup coconut milk (optional)
  • 4 cups fish or vegetable stock
  • 1 tablespoon fish sauce (optional)
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish
  • Lime wedges for serving

INSTRUCTIONS:-

Prepare the Base: Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes.

Add Vegetables: Add the carrot, celery, and bell pepper to the pot. Cook for another 3-4 minutes until the vegetables begin to soften.

Add Tomatoes and Stock: Stir in the chopped tomatoes and cook for another minute. Pour in the stock, bring to a simmer, and let it cook for 10 minutes, allowing the flavors to meld.

Add Prawns: Once the soup is simmering, add the prawns. Cook for 5-7 minutes until the prawns turn pink and are cooked through.

Coconut Milk & Seasoning (optional): Stir in the coconut milk for a creamy texture. Add fish sauce, salt, and pepper to taste.
